Sol Cuevas es investigadora Ramón y Cajal en el IEGD, en el grupo de Sistemas Agroalimentarios y Desarrollo Territorial (SADT). Sol es economista de formación, especializada en economía alimentaria y de la salud. Está interesada en el análisis de políticas y gobernanza para promover transiciones socioambientales saludables, particularmente en el ámbito de los sistemas alimentarios.
Su trabajo utiliza metodologías de análisis de políticas y economía política crítica, sistemas complejos y síntesis de evidencia, aplicados al estudio de los sistemas alimentarios más sostenibles y saludables. También ha trabajado de manera más amplia en el análisis de políticas en la intersección de la sostenibilidad ambiental y la salud (por ejemplo, usando enfoques de Planetary Health y One Health).

Política comercial, comportamiento corporativo, cadenas de valor global, impuestos ambientales, financiarización y mecanismos de financiación en las políticas alimentarias y climáticas, políticas de digitalización agraria y políticas de promoción de la agricultura urbana
